Zucchini Recipe stuffed with rice and tuna

Ingredients to make Zucchini stuffed with rice and tuna:

  • 2 courgettis
  • 1 glass of rice
  • 1 onion
  • 2 garlic
  • ½ red bell pepper
  • 1 can of fried tomato
  • Sal
  • 1 handful of grated cheese (optional)
  • Olive oil (optional)
  • 2 cans of tuna in olive oil or natural

How to make Zucchini stuffed with rice and tuna:

Wash the courgettes well under the tap and without peeling or removing the stalk, cut them in half lengthwise.

Sprinkle a pinch of salt and a splash of oil (you can use the oil drained from the tuna cans) on top, and with the oven preheated to 200ºC, cook the courgettes between 10 and 15 minutes until they are soft. You can also boil them for about 10 minutes in a pot with water and salt if you prefer.

Tip: To save time, cook vegetables in the microwave for about 8-10 minutes at 750-850 W power.

At the same time, put a pot of water to boil and cook the rice with a pinch of salt for about 15 minutes, depending on the type of rice.

Tip: If you choose to prepare a zucchini stuffed with brown rice you will have to cook it twice as long.

Meanwhile, peel and chop the onion and garlic and fry them in a pan with a little oil from the cans, so the courgettes stuffed with rice and tuna will be much tastier.

Add the chopped red pepper next and continue cooking until everything is well browned.

Then add the drained tuna and the fried tomato and cook this sauce for about 5 more minutes so that all the flavors are integrated.

Once the courgettes are cooked, with the help of a soup spoon we carefully remove the pulp so that there is a hole to fill them, and we add this to the well-chopped sauce.

When the rice is boiled, drain it well, add it to the sauce and mix everything well for another 5 minutes. Rectify flavor if necessary.

Fill the courgettes with the sauce with rice, being careful not to burn yourself, sprinkle a handful of grated cheese to taste and gratin them.

Tip: This step is completely optional because you can now eat the rice-stuffed courgettes directly like this without gratin.

Serve each zucchini stuffed with rice and tuna on a plate accompanied by a little green salad.
