It would be impossible to list how many kinds of pizzas there are and how many ingredients we can prepare them with. In this case, we add to the list of unusual pizzas this zucchini pizza recipe. We teach you how to make a type of dough that will reduce the use of processed flour almost to the maximum, since we will replace a large part of it with a vegetable that is as healthy as it is versatile: zucchini!

To make that zucchini-based pizza, we just have to grate it and add it to the pizza dough mixture. Don’t worry, we’ll walk you through each step so you can discover how to make zucchini pizza and enjoy a delicious, innovative and very light meal. Go for it!

Ingredients to make Zucchini Pizza:

  • 2 medium zucchini
  • 1 egg
  • 5 tablespoons of wheat flour
  • 1 cup grated Parmesan cheese
  • 1 pinch of garlic powder, salt
  • For the pizza filling
  • 3 slices of mozzarella
  • 1 tomato cut into slices
  • 2 pinches of dried oregano
  • 1 splash of extra virgin olive oil

How to make Zucchini Pizza:

  1. Wash and cut the ends of the zucchini, grate the skin and let all the water it contains drain.
  2. Do the same with the other zucchini, but instead of grating it, cut it into thin slices and reserve them to fill the pizza later.
  3. If you have any left over, thank the rest and add it to the one you are reserving to make the zucchini pizza crust.
  4. Leave the grated zucchini on kitchen paperand press with the palm of your hand so that it absorbs the rest of the water it contains.
  5. This will be ready to prepare the zucchini pizza base along with the rest of the ingredients.
  6. To prepare the pizza dough, you will need to put together the drained zucchini, the egg, the flour and the grated Parmesan cheese in a bowl.
  7. Form a ball by kneading with a tongue or wooden paddle, then you can knead by hand. Start the oven at 200ºC with the temperature up and down.
  8. Put a kitchen paper on the baking tray and sprinkle flour on it.
  9. Extend the dough forming a flat sphere, put it in the oven and leave it for 15 minutes, lowering the temperature to 180 ºC.
  10. Take the base out of the oven, but do not turn it off. Fill the pizza by placing the cheese, zucchini and tomato in order.
  11. Sprinkle with oregano and pour a thin drizzle of olive oil over the pizza. Put it back in the oven and leave it for 10 more minutes at medium height.
  12. Once ready, all that remains is to serve your zucchini pizza! You can have it for lunch or dinner, either way it will be much healthier than a conventional pizza.
