Zucchini Pancakes Recipe

Ingredients to make Zucchini Pancakes:

  • 1 zucchini
  • 2 pinches of salt
  • 1 egg
  • 2 tablespoons grated cheese
  • 1 fresh spring onion
  • 1 teaspoon Royal-type chemical yeast
  • 2 tablespoons corn flour or cornstarch
  • Olive oil

How to make Zucchini Pancakes:

Grate the zucchini and if the skin looks good, you can grate it with it. Try to choose some large, green-skinned zucchini.

Place the grated zucchini in a colander or draining container. Add salt so that the zucchini releases the water it contains and keep it draining for a few minutes.

After this time, crush the zucchini with the palm of your hand to drain it as much as possible and use kitchen paper to absorb the water completely. Press it into the paper to release any remaining liquid.

Take the zucchini to a bowl and add all the ingredients: egg, grated cheese, cornmeal, finely chopped spring onion and yeast. Add a pinch of salt and stir until the ingredients are fully integrated.
