Ingredients to make Zucchini Pancakes:

  • 1 zucchini
  • 2 pinches of salt
  • 1 egg
  • 2 tablespoons grated cheese
  • 1 fresh spring onion
  • 1 teaspoon Royal-type chemical yeast
  • 2 tablespoons corn flour or cornstarch
  • Olive oil

How to make Zucchini Pancakes:

Grate the zucchini and if the skin looks good, you can grate it with it. Try to choose some large, green-skinned zucchini.

Place the grated zucchini in a colander or draining container. Add salt so that the zucchini releases the water it contains and keep it draining for a few minutes.

After this time, crush the zucchini with the palm of your hand to drain it as much as possible and use kitchen paper to absorb the water completely. Press it into the paper to release any remaining liquid.

Take the zucchini to a bowl and add all the ingredients: egg, grated cheese, cornmeal, finely chopped spring onion and yeast. Add a pinch of salt and stir until the ingredients are fully integrated.

When you see that everything is integrated and a light paste has formed, heat a little olive oil in a frying pan and add two tablespoons full of the zucchini pancake batter. Flatten them gently with a paddle to form pancakes. Make them so that they are neither too big nor too thick.

If necessary, you can add a little more oil so that the pancakes do not stick to the pan and take on a golden hue. When they are golden, you can flip them. They will be ready in 3 minutes on low heat. Serve your zucchini pancakes with your favorite sauce and enjoy!
