Ingredients to make Zucchini Fritters:

  • 1 medium zucchini
  • 1 pinch of dill and garlic in spices
  • 1 pinch of ground cumin
  • 1 egg
  • 1 teaspoon chemical baker’s yeast
  • 2 tablespoons of corn flour
  • 1 cup of breadcrumbs
  • 2 glasses of sunflower oil or seeds
  • 2 pinches of salt

How to make Zucchini Fritters:

Grate the zucchini and put it in the colander with a pinch of salt so that it sweats and releases all its water. Keep it for 30 minutes and stir from time to time to help the liquid come out better.

On the other hand, put flour, dill, cumin, egg and yeast in a bowl. Go stirring so that the ingredients are well integrated.

Remove the zucchini and squeeze it with kitchen paper so that it is free of liquids. Add it to the flour and egg mixture and stir, also add minced garlic to your liking. Keep stirring.

Add the breadcrumbs, this will thicken the mixture a little and will facilitate the work to form the fritter balls. Heat the oil in a deep frying pan.

Tip: If you don’t have a pan with a deep bottom, use a saucepan, it will be a great option.

When the oil is steaming well, form small balls with the help of two spoons. Add them to the pan, but don’t put too many. Go frying them three by three to make them looser and crispier.

Tip: Remove the fritters to a plate lined with kitchen paper to absorb excess oil.

Turn the zucchini fritters when you see them golden brown. You will have them ready when they have completely browned. Serve them immediately to enjoy them very crispy.
