Ingredients to make Cream of zucchini with onion and cheese:

  1. 1 kilogram of courgettes
  2. 1 unit of Onion
  3. 4 units of light cheeses
  4. 1 unit of chicken bouillon cube
  5. 1 pinch of salt
  6. 2 tablespoons of oil

How to make Cream of zucchini with onion and cheese:

  • We start by chopping and frying the onion. To do this, put a pan with a few tablespoons of oil and fry it over medium heat.
  • While the onion browns a little, peel the courgettes, cut into slices and divide into two parts.
  • I cut them leaving a little of the skin, but this is to taste.
  • Add a part of the zucchini together with the onion in the pan and sauté everything together until they brown a little.
  • When the two ingredients have been lightly sauteed, put the rest of the zucchini in the pan and add water to cover everything equally.
  • We keep cooking over medium-high heat until it starts to boil, then we add the stock cube along with the cheeses. Let the whole cook for another 15 minutes.
  • After this time, we remove the preparation from the heat and grind everything until we get a smooth and homogeneous cream. You can crush it with the help of a hand blender or in the blender.
  • We put our light zucchini cream back in the pan and check the seasoning, correcting with a pinch of salt or pepper if necessary.
  • When it is hot again we can serve and enjoy our cream of zucchini with onion and cheese. This vegetable cream is ideal for dinner and to include in your diet menu as it provides very few calories.
