Zucchini and Tuna Pie Recipe

Zucchini and tuna pie is one of those easy, quick and delicious recipes that we should all have in our cookbook when we want to have something healthy and tasty for dinner at the same time. It is a very balanced and light dish, with hardly any calories, especially if the semi-cured cheese is replaced by a low-fat one.

Ingredients to make Zucchini and Tuna Pie:

  • 1 large zucchini
  • 2 tomatoes grandes
  • 3 eggs
  • 2 cans of natural tuna
  • 1 dessert spoon of oregano
  • 1 pinch of salt to taste
  • 4 tablespoons grated semi-cured Manchego cheese
  • 1 splash of olive oil

How to make Zucchini and Tuna Pie:

Wash and cut the zucchini into thin slices and the tomato into medium cubes, although if you don’t like the texture of the tomato you can also grate or crush it.

Grease a special baking dish with oil and start assembling the courgette and tuna cake, placing a first layer of courgette and another of tomato. He adds a pinch of salt, a little bit of oregano, and continues layering.

Tip: To avoid doing it in the oven, you can grill the zucchini and tomato and make the layers following the instructions.

Drain one of the cans of tuna and spread it over the tomato layer. Replace a layer of zucchini, another of tomato, sprinkle with salt and oregano and, finally, the second can of tuna. If you prefer, you can use tuna in oil.

Tip: Preheat the oven to 200 ºC with heat up and down.

Put the last layer of zucchini and pour a drizzle of olive oil on top. Beat the egg, pour it over the courgette pie with tuna and spread the grated cheese on top.

Bake the tuna and zucchini cake at medium height, maintaining the temperature of 200 ºC, for 20 minutes. Once the time has elapsed, check if it is necessary to leave it a few more minutes in the oven.

Tip: You can also make the courgette and tuna cake in the microwave by cooking it at maximum power for 5 minutes. Check the doneness and add minutes as necessary.

When it’s ready, take out the dish being careful not to burn yourself and serve. You can add more grated cheese if you like it with a lot of cheese.
