Ingredients to make Gazpacho Yeclano:
- 1/2 pc. rabbit
- 1 pc. pepper
- 1 pc. tomato (grated)
- Salt
- Gazpacho (in paste, a handful per person)
- Oil
How to make Gazpacho Yeclano:
Sauté the pepper in oil, then add the rabbit in pieces and when it is well fried, add the grated tomato. When all this is fried, add water and when it starts to boil add the pasta, and when it is soft it is ready to serve. (Salt, each to your liking). A piece of pasta is usually placed on the plate (which is the bottom of the plate) and the gazpacho is poured on top.
The bottom cake is soaked with the broth and the cake on the plate is usually eaten with anchovies, salt, and sugar.
Normally it is typical to put the gazpacho in a large tartlet and at the bottom a cake and it is placed on the table and everyone from there eats.
