White bean stew recipe in a pressure cooker

Lent is the period that precedes Holy Week and implies some restrictions when it comes to eating. Many people comply with them and on Fridays they must keep a vigil, or what is the same, not eat meat. The white bean stew in a quick pot that I share in is ideal for the Friday menu of Lent and also for all those people who do not consume meat or animal products, so it could serve perfectly as a vegan vigil stew. I hope you are encouraged to prepare it, either at this time of year or on any cold day, that it feels great.

Ingredients to make white bean stew in a quick pot:

  • 500 grams of white beans
  • 2 potatoes
  • 2 carrots
  • 1 ripe tomato
  • 1 pinch of salt
  • 1 pinch of sweet paprika
  • 1 pinch of ground black pepper
  • 1 tablespoon extra-virgin olive oil

How to make white bean stew in a slow cooker:

  1. To prepare our soup, the night before we will put the beans in a large bowl and add plenty of water. We will leave them to soak at least overnight.
  2. The next day we drain them, wash them and put them in the pot with a tablespoon of olive oil. We put the right amount of water to cover them because in this quick cooking there is almost no evaporation, and we close the pot according to the manufacturer’s instructions.
  3. We put it on the fire and when the spout rises indicating that the pressure has been made, we lower the intensity of the fire to a minimum and cook for ten to twelve minutes.
