How to make Weathered Shrimp Tacos:

  • To start the weathered shrimp tacos recipe, perfectly clean the shrimp, removing the shell and, with the help of a fork, also remove the black line that the shrimp usually have.
  • When you have the shrimp clean, season with a little salt to taste, a pinch of black pepper and a pinch of garlic powder, mix and let stand for 10 minutes. This way, the seafood will have more flavor.
  • While the shrimp rest, prepare the batter mixture. Thus, in a container mix the wheat flour with the cornstarch, the salt, a little garlic powder and the paprika. Add the mineral water or beer and mix until you get a light texture. The beer-battered shrimp tacos have an extra flavor and texture, but they are also delicious with water.
  • Tip: if the mixture feels too thick, add a little more mineral water or beer.
  • Heat the oil in a pot. While it’s heating up, add the shrimp to the mixture to start battering them.
  • Tip: make sure the oil is hot enough to coat the shrimp.
  • Fry the battered shrimp for a few seconds or until you notice that they are golden. Then, remove the shrimp from the pot and let them rest in a bowl lined with a towel or absorbent paper to remove excess oil.
  • Tip: the shrimp cooks very quickly in the hot oil, so it only takes about 30-40 seconds for it to have the perfect consistency.
  • Heat the corn tortillas and assemble your weathered shrimp tacos with a little cabbage, avocado, lemon and hot sauce to taste. Sinaloa style shrimp tacos are ready! To make the Ensenada-style weathered shrimp tacos, add pickled red onion and prepare a very spicy sauce, like a chipotle mayonnaise, which is made by mixing mayonnaise, sour cream, lemon juice and chipotle marinade.
