How to make Warm Shrimp Salad:
Gather all the ingredients to prepare our warm salad with prawns. If you don’t want to use mozzarella cheese, goat cheese also works perfectly, although it has a stronger flavor. We start by cleaning the prawns well, removing their heads and shells. Then, with a small and very sharp knife, we open the side where the dark vein is visible and remove it.
Next, we cut the cheese into cubes. Always remember to wash the cutting board very well every time you change the ingredient, in this way we prevent the food from acquiring other flavors.
Now we cut the tomato, in this case we will remove all the seeds and cut it into small squares, more or less the same size as the cheese. Now it is the turn of the green leaves, in this case we have decided to use romaine lettuce, but if you want you can use any other variety, sprouts or escarole. Then, we wash and chop the lettuce with our hands to prevent it from browning.
Heat oil in a frying pan over high heat to sauté the garlic with the prawns. Add salt and pepper to taste, remembering that the garlic must be finely chopped. Keep cooking for a couple of minutes and remove from heat.
Mix 2 tablespoons of oil together with a tablespoon of balsamic vinegar in a bowl to make the vinaigrette for our warm salad. Stir well and when you have it, add it to a bowl together with all the ingredients except the prawns. Serve the warm prawn salad by dividing the seasoned salad into two plates and decorate with the prawns on top.
