This recipe is a canned lentil salad that can be eaten hot, warm or cold, as you prefer, and is perfect for any time of the year.

Ingredients to make Warm Lentil Salad:
- 200 grams of cooked lentils
- 1 bunch of green asparagus
- 1 medium broccoli
- Virgin olive oil
- Sherry Vinegar
- Salt
- Dried oregano
How to make Warm Lentil Salad:
First, start preparing this warm lentil salad, wash the broccoli and cut it into small florets. If you have a steamer, cook the broccoli sprigs for about 10 minutes and reserve hot, if not, boil the broccoli, strain and reserve.
I have steamed the broccoli in a silicone steamer that goes in the microwave and in 10 minutes it is cooked, but you can do it with whatever you have, steamed or boiled.
Tip: Whatever you do, don’t cook it too much; make sure it stays a bit hard, al dente, so it doesn’t fall apart. Wash the asparagus, cut the remaining and hard part and cut them into pieces, sauté in a pan until golden brown and reserve. Put the cooked lentils in a bowl and heat them in the microwave, set aside.
While the vegetables are being sautéed and cooked, prepare the vinaigrette for the lentil salad, mixing the oil, the vinegar, the oregano and adding the necessary salt, then beat with a fork until all the ingredients are emulsified and set aside.
Trick: It is a very simple, fast and healthy salad!
We assemble the vegan lentil salad: place the warm lentils on a plate. Put the broccoli florets around the lentils and the asparagus pieces on top. Season with the vinaigrette by pouring it over the warm lentil salad and that’s it.
