On this occasion, we have prepared a warm chickpea and chicken salad to eat at any time of the year. It is a salad of chopped chicken and chickpeas to which we have added spinach, some spice and raw tomato and pepper. The combination of ingredients is very complete as a main dish or as an accompaniment to another light dish.
This warm salad is very rich in fiber, it also contains proteins and of course, it provides us with vitamins (such as A, B and C) and minerals. If you don’t have much time to cook the chickpeas, you can make this jar chickpea salad in just 15 minutes and have it ready for the next day. We look forward to your feedback!
Ingredients to make Warm Chickpea Salad with Chicken:
- 500 grams of cooked chickpeas
- 1 tomato
- 1 green bell pepper
- ½ spring onion
- 2 boneless chicken thighs
- 1 pinch of ground cumin
- 2 cups fresh spinach
- 1 pinch of salt
- 1 pinch of ground black pepper
How to make Warm Chicken Chickpea Salad:
We gather all the ingredients to prepare the warm chickpea salad. Chop and sauté the chicken in a pan with a drizzle of olive oil. Season with salt and pepper. This way the chickpea and chicken salad will be much tastier than if we cooked it instead of frying it. It is important to wash and drain the canned chickpeas to remove the preservation liquid. Once drained we reserve them.
Tip: If you prefer, you can cook the raw chickpeas in a pot of boiling water following the manufacturer’s instructions.
Add the chopped spring onion to the pan with the chicken and let it brown for 3 minutes. As it is a warm chickpea salad, we are going to cook some of the vegetables, but not all of them. Add the spinach and let it reduce in size. Next, add the cooked chickpeas and a little ground cumin stir well, season with salt and pepper if necessary, and remove from the heat. On the other hand, we are going to wash and cut the green pepper and the tomato into not very large pieces to incorporate them into the warm vegetable salad. We serve the warm chickpea salad with chicken with a drizzle of olive oil on top and enjoy!
