Warm beef soup recipe

Ingredients to make Warm Beef Soup:

  • 1 kg of veal meat (pieces with and without bone)
  • 2-3 carrots
  • 3 cloves
  • 2-3 pieces of celery
  • Parsley
  • 1 tablespoon of coarse salt
  • 1 onion

How to make Warm Beef Soup:

  1. We start with the onion. Peel it and cut it in two and we can prepare it in two ways: either with the cloves (we stick them in the onion and then they don’t get lost in the broth) or toasted in a pan, above and below.
  2. Peel and wash the carrots and celery.
  3. In a pot put the vegetables in large pieces, the two pieces of onion, the parsley and the meat (well washed).
  4. Cover with cold water and bring to a boil. Add the salt.
  5. When it starts to boil, the foam will start to come out. We remove it with a scraper, lower the heat and let it cook for 2 hours.
  6. During cooking remove the foam if it continues to come out.
  7. After this time we can remove the vegetables and meat (which obviously can be eaten and is very tasty!) and filter the broth.
  8. To make our broth easier to digest, lighter, once it is cold, we let it rest in the fridge overnight.
  9. The next day a layer of fat will have formed that we can easily remove with a spoon.
  10. And we have the broth ready to consume.
