Ingredients to make Vigil Chickpeas:
- 280 g of chickpeas (raw)
- Half an onion
- 2 garlic with the skin
- 1 tablespoon sweet paprika
- 1 boiled egg
- A quarter of a kilo of spinach
How to make Waking Chickpeas:
1.We put the chickpeas to soak the day before, with warm water and salt.
2.Wash the chickpeas, cook them in boiling water.
3.And we put a piece of onion and garlic.
4.They are left until they are cooked (about four hours in a normal stew, in the pressure cooker 20 minutes).
5.When they are cooked, add the chopped egg white and spinach and let it cook a while longer.
6.Meanwhile, sauté the rest of the onion in a little olive oil.
7.Then add the paprika, the yolk, a few chickpeas and the broth.
8.We grind it and then add it to the chickpea stew.
9.Letting it cook a little more so that the broth thickens.
