Victoria Salad Recipe

Ingredients to make Victoria Salad:

  • 1/4 kilo of parboiled chopped green beans
  • 1/2 kilo of boiled chopped potatoes
  • 2 carrots chopped and parboiled
  • 4 eggs
  • 1 can of petit-poi’s (peas)

For the willow

  • 1 cream cheese
  • 1 can of heavy cream
  • 1 teaspoon minced mustard pickles
  • 2 sweet pickles, chopped
  • The juice of half a lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 teaspoon Worcestershire sauce

How to make Victoria Salad:

In a comfortable bowl, mash the cream cheese with a fork and add the heavy cream, mix very well, so that there is a very smooth cream. Then add the pickle, pickles, lemon, Worcestershire sauce, salt and sugar.

Pass the egg yolk through the strainer and add it to the mixture, mix very well and set aside. Separately, in another bowl, place the green beans, potatoes, carrots and the can of petit-poi, stir very well. Bathe the salad with the sauce.
