Vichyssoise Recipe without Cream

Vichyssoise is a recipe that reminds us of summer. It is fresh, with a mild flavor and very light, everything essential for that time of year when we run away from copious meals. The recipe is very simple: it is a cold cream based on leek, potato, chicken broth and milk cream, cream or crème fraîche. Nothing more, but these simple and humble ingredients offer a surprising dish, full of flavor and freshness.

In this article, we propose a recipe for vichyssoise without cream, substituting it for oat milk. In this way, it will be suitable for people who are lactose intolerant, vegans and much healthier. So, without further ado, let’s get to the recipe!

Ingredients to make Vichyssoise without cream:

  1. 3 leeks
  2. 2 small potatoes
  3. ½ liter of chicken or vegetable broth
  4. 150 milliliters of oat milk
  5. 1 dessert spoon of vegetable margarine

How to make Vichyssoise without cream:

  • Heat a pot with the margarine. When hot, add the sliced ​​leek and cook for 5 minutes.
  • Tip: don’t turn the heat up too much, this way you will prevent the margarine from burning.
  • Peel and wash the potatoes. Add them to the pot, cut into cubes of the same size, and fry for another 4 minutes, stirring occasionally.
  • At this point, add the chicken or vegetable broth and season to your liking. Cover the pot and cook the vegetables for about 15 minutes or until the potato is tender inside.
  • Tip: it is important that the vegetables are well covered with the broth. If necessary, add a little more.
