Venetian Rice Recipe

Ingredients to make Venetian Rice:

  • 1 kilo of peas (they can be frozen)
  • 350 grams of rice
  • 30 grams of olive oil
  • 50 grams of butter
  • 50 grams of cured ham
  • 1 large onion
  • 2 sprigs of parsley
  • 1 liter of meat broth
  • 50 grams of grated Parmesan cheese
  • 1 pinch of pepper
  • 1 pinch of salt

How to make Venetian Rice:

  1. Put the oil, half the butter and the ham or bacon cut into small pieces in a casserole.
  2. Add the onion and parsley very well chopped.
  3. Lightly fry all this and add the peas, stirring well so that they soak up the seasoning.
  4. Add a little broth and cook for about 10 minutes.
  5. Then add the rice and cover it with the necessary broth.
  6. Before serving, sprinkle the rice with grated cheese and a little pepper and spread a few pieces of butter on the surface.
