Vegetarian wire recipe

Ingredients to make Vegetarian Wire:

  • 2 medium nopales
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 serrano chili
  • 1 medium onion
  • 1 cup white mushrooms
  • 1 cup cremini mushrooms
  • Salt to taste
  • Oil

To accompany

Corn tortillas or tostadas

Sauce to taste

Lemon

How to make Vegetarian Wire:

Julienne the nopales and the green and red peppers, make sure to clean the peppers beforehand, removing the seeds and veins.

Cut the mushrooms, the serrano pepper and the onion into slices, try to make sure that all the vegetables are of a similar thickness.

In a large skillet, heat a tablespoon of oil, start by cooking the nopales and peppers for 8 to 10 minutes until the nopales have changed color and the peppers have softened slightly, stirring constantly to prevent burning.

Then, add the rest of the ingredients, the mushrooms, the onion and the serrano pepper, since these last ingredients cook faster, it will be enough to cook them for about 3 minutes, season with salt to taste.

Serve the vegetarian wire accompanied by corn tortillas, a touch of lemon and the sauce of your choice.
