Vegetarian Stuffed Red Pepper Recipe

This vegetarian stuffed red pepper is a great option to serve as an appetizer for a meal with friends or family. The type of filling can be very varied since you can use all kinds of vegetables, legumes, mushrooms or cereals that you want but, specifically, I have used pepper, onion, zucchini, mushrooms and cheese. Look at the ingredients and step by step and learn how to do it easily.

Ingredients to make Vegetarian Stuffed Red Pepper:

  • 2 red pepper
  • 6 mushrooms or other mushrooms
  • 1 small zucchini
  • ½ onion
  • 1 tablespoon olive oil
  • 1 handful of grated mozzarella cheese (or other type)

How to make Vegetarian Stuffed Red Pepper:

Gather the ingredients needed to make these Baked Stuffed Peppers. Wash and cut the red bell peppers a little above the middle and remove the seeds and strings from the larger half. This part will be the one we will fill in.

Cut the other half of the vegetable into small pieces since we will use it as the stuffing for the baked stuffed red pepper, and do the same with the onion, zucchini and mushrooms, chopping them finely.

Sauté the onion in a pan with the olive oil and when it is golden, add the remaining vegetables. Season with salt and cook stirring occasionally for 5-10 minutes.

When the vegetables are ready, fill it and cover it with mozzarella cheese. Put the red pepper stuffed with vegetables in the oven preheated to 200°C until the cheese has melted.

Tip: Sprinkle a bit of oregano or some aromatic herbs on top of the cheese to give it an extra touch of flavor.
