If you are vegan, you can replace the cheese with tofu, another plant-based cheese, or simply not use it. On the other hand, if you are celiac, keep in mind to use exclusive utensils for you when cooking, as well as products that have not been contaminated. Ingredients to make Vegetarian Stuffed Potatoes:
- 2 papas
- ½ package of spinach
- ½ cup of mushrooms
- Dehydrated onion to taste
- 30 grams of fresh cheese
- 30 grams of grated cheese
- Nutmeg to taste
- Salt and pepper to taste
How to make Vegetarian Stuffed Potatoes:
Wash and prick the potatoes to cook them with their skin in the microwave for 6 minutes. After that time, turn them and cook them for another 6 minutes.
Tip: if you don’t have a microwave, cook it with its skin in boiling water until you notice that it is soft when you pierce it. This way, it will absorb less water than if you peel it and boil it in cubes.
Being careful not to burn yourself, cut the potatoes in half. Reserve the fourth half for another recipe. With the help of a spoon, remove the pulp from the potatoes, leaving just an edge attached to their skin.
Mix the pulp of the potatoes with the previously washed and chopped spinach leaves, as well as with the mushrooms and seasonings.
Also add the cubed cheese to obtain the mixture for your healthy stuffed potatoes. If you don’t want to use cheese, you can omit it. Fill the potatoes with the mixture that you have made in the previous points.
Cover the potatoes stuffed with vegetables with the grated cheese. Gratinate them for 10 minutes in a strong oven.
