Ingredients to make Vegetarian Stew:
- 1 large or 2 medium eggplants, peeled and diced
- 2 large diced tomatoes
- 2 large onions cut in 1/8
- 3 minced garlic cloves
- 1/2 pumpkin or wide squash in cubes
- 3 round zucchini in cubes
- 1 large diced potato
- 1 tbsp. margarine or butter
- 1 cup of water
- Salt
- pepper to taste
- grated cheese (optional)
How to make Vegetarian Stew:
- In a saucepan, place the tablespoon of margarine or butter and when it has melted, add the onions and fry them for a little while.
- Add the eggplant, the zucchini, the garlic, the potato, the pumpkin, the tomatoes and the water.
- Season and stir to prevent it from sticking. When the potato and pumpkin are very tender, remove from heat and serve in pots.
- If desired, sprinkle with a good grated cheese.
