Ingredients to make Vegetarian Risotto:
- 300 gr. of rice
- 1 onion
- 1/2 red bell pepper
- 1/2 eggplant
- 1/2 zucchini
- 1 carrot
- 1 leek
- 100 gr. of green beans
- 2 tablespoons of olive oil
- Salt
- Pepper
- Broth
- Grated Parmesan cheese
How to make Vegetarian Risotto:
- Prepare the ingredients.
- Cut the vegetables.
- Sauté the onion and the bell pepper with the olive oil.
- Add the other vegetables. Season.
- Cook all the vegetables at medium point. Withdraw.
- Add the rice in the same pan. Stir until they take on a light toasted color. Spice with salt and pepper.
- Add the broth little by little. Stir occasionally.
- When the rice is almost ready, add the vegetables.
- Mix all ingredients. Cook until complete cooking.
