Ingredients to make Vegetarian Pumpkin Stew:
- 500 grams of pumpkin
- 70 grams of peanuts
- 1 tablespoon of brown sugar
- 1 pinch of salt
- 1 tablespoon of oil
How to make Vegetarian Pumpkin Stew:
Cut the pumpkin into medium pieces. Heat a frying pan with oil and fry the pumpkin, stirring occasionally, until it begins to soften and become tender. When the pumpkin is soft enough, mash it up a bit with a fork.
Add the peanuts, salt and sugar, stir well and cook for another 5 minutes so that the flavors are integrated.
