Vegetarian Pumpkin Stew Recipe

This vegetarian pumpkin stew recipe is one of the most traditional in Tanzania consisting of a rich and simple pumpkin and peanut stew. These two ingredients are very present in African gastronomy and combine very well with each other. It is a rustic vegetarian pumpkin stew, with ingredients from the land like most recipes from this continent and you will undoubtedly love its flavor and texture. You can serve it as a stand-alone vegetarian dish or as a side dish for meat or vegetable dishes.

Ingredients to make Vegetarian Pumpkin Stew:

  • 500 grams of pumpkin
  • 70 grams of peanuts
  • 1 tablespoon of brown sugar
  • 1 pinch of salt
  • 1 tablespoon of oil

How to make Vegetarian Pumpkin Stew:

Cut the pumpkin into medium pieces. Heat a frying pan with oil and fry the pumpkin, stirring occasionally, until it begins to soften and become tender. When the pumpkin is soft enough, mash it up a bit with a fork.

Add the peanuts, salt and sugar, stir well and cook for another 5 minutes so that the flavors are integrated.

Serve the Tanzanian vegetarian pumpkin stew hot.
