Ingredients to make Vegetarian Nuggets:
- 1 cup of pea flour
- 2 tablespoons herbs de Provence
- 1 dessert spoon of ground paprika (chili)
- 1 dessert spoon of cumin
- ¾ cubic centimeter of water
- 1 cup of breadcrumbs, polenta or oatmeal
- ½ cup plain yogurt or 1 egg
How to make Vegetarian Nuggets:
- To begin forming the vegetarian nuggets, season the flour. We have opted for pea flour which, in addition to being nutritious, is very appealing to children because the result is green nuggets. However, you can replace it with chickpea flour, lentil flour, oatmeal…
- Add the water little by little, seeking to form a malleable mass.
- To give them the shape of nuggets, take a little dough and make a ball with your hands. Next, he crushes the ball with his palms.
- To finish the shape, pinch one of the ends as you see in the image. Now you have your perfect vegetarian nuggets!
- Cook the pea nuggets (or the flavor you have chosen) in boiling water for approximately 5-7 minutes. Make sure they don’t overlap the background because they could stick together.
- Remove the pea nuggets from the water with a slotted spoon and set them aside to cool.
- Continue with the recipe, coating the nuggets. To do this, beat the egg a little or season the natural yogurt with a little pepper and arrange the breadcrumbs, polenta or oatmeal on a plate. You can choose the coating that you like the most.
- Tip: if you are making vegan nuggets, choose a vegetable yogurt.
- Pass the nuggets first through the egg or yogurt and then through the chosen dry ingredient. Reserve them.
- Brown them on both sides in a pan over high heat and that’s it. To keep veggie nuggets healthy, don’t use too much oil when browning them.
- You can serve them with a fresh salad, pumpkin puree or a vegetable omelet. You can also freeze them and, in this way, they will last you fit for consumption for 3 months. As you can see, these are perfect and delicious vegetarian nuggets for children and adults.
