Ingredients to make Vegetarian Noodle Soup:
- 1 liter of water
- 150 grams of Spaghetti
- 1 unit of green onion
- 2 units of medium potatoes
- 2 units of small carrots
- 1 unit of Tomato
- 1 clove garlic
- 2 tablespoons chopped coriander
- 1 pinch of salt
- 1 pinch of black pepper
How to make Vegetarian Noodle Soup:
- The first thing you must do to make this vegetarian soup is to prepare the ingredients.
- Cut the carrot, potatoes and tomato into small cubes.
- Then chop the onion, garlic and coriander finely.
- Reserve everything separately, since each ingredient, due to the difference in cooking time, has its right moment to be incorporated into the preparation.
- To make the vegetarian broth, bring the water to a boil and add the onion and carrots.
- Let cook for 10 minutes and add the potato and noodles.
- In a frying pan, blanch the garlic and brown along with the tomatoes in a little oil. Season with salt and pepper.
- When the tomato is cooked, add it to the noodle soup. Also add the coriander.
- Mix and cook everything with the pot covered and over low heat for 5 more minutes.
- Serve the vegetarian noodle soup and finish the dish with a little fresher cilantro and grated cheese if desired. To enjoy!
