Vegetarian Lentil Soup Recipe

Lentil soup is a classic in the kitchen of our grandmothers, they were the only ones who could comfort us with this incredible combination of vegetables and vegetable protein. Sometimes they added some kind of meat, or bacon to give it much more flavor. This soup, apart from being healthy and specially designed for vegetarians, is rich in vitamins, minerals and is a very complete preparation since the lentil provides vegetable proteins that are very important in our diet. Know the recipe for vegetarian lentil soup and enjoy it.

Ingredients to make Vegetarian Lentil Soup:

  1. 1 cup of Lentils
  2. 1 cup of mixed vegetables
  3. 1 branch of long onion
  4. 1 unit of Tomato
  5. 1 unit of Avocado
  6. 1 pinch of salt pepper
  7. coriander to taste

How to make Vegetarian Lentil Soup:

  • The first thing you should do is get all the ingredients ready to make the vegetarian soup.
  • You should leave the lentils with water for at least 4 hours before or if you can, leave they overnight, this in order for them to open and become much softer.
  • In a large pot with a little oil, sauté the finely chopped long onion for 3 minutes over high heat.
  • Then, add the grated or finely diced tomato with the seeds and cook for 3 more minutes, as a secret you can add a tablespoon of tomato paste, add salt and pepper to taste.
  • Then add 2 large cups of water and cover, cook until the broth is boiling.
  • Once the broth is boiling, add the lentils and continue cooking over high heat but with the pot covered for 5 minutes.
  • Finally, after 5 minutes add the vegetables, rectify flavor with salt and pepper and cook the lentil soup over low heat for another half hour with the pot covered. If you wish you can add a few diced potatoes to thicken the soup.
