The vegetarian fideuá is a very complete and nutritious dish. Its preparation is very similar to that of paella, but thick noodles are used instead of rice. Traditionally, fideuá is prepared with shellfish and fish, but in this recipe we are only going to use mixed vegetables and chickpeas to add protein to the dish. This vegan fideuá is a perfect dish to enjoy with the family or a large company
Ingredients to make vegetarian Fideua:
- 1½ cups of noodles for fideuá
- 1 cup of cooked Chickpeas
- 100 grams of soy vegetable meat in strips
- 3 garlic cloves
- 1 onion
- 1 carrot
- ¼ cup of Peas
- ½ cup frozen chopped artichokes
- ½ cup of broccoli
- ½ cup of green beans
- 2 tomatoes
- 1 teaspoon of Turmeric
- 2 bay leaves
- ½ teaspoon of Salt
- 2 tablespoons of vegetable oil
- 1 piece of ginger
- 1 liter of vegetable broth
- 1 pinch of Saffron
How to make vegetarian Fideuá:
- Before starting to cook this vegetarian fideuá, we chop the onion, garlic and ginger.
- We also cut the tomatoes into cubes and the carrot into slices.
- Heat the oil in a paella pan or deep frying pan. Sauté the onion until it starts to turn transparent.
- Add the garlic and ginger fry for a minute and add the tomatoes. We continue cooking several more minutes until the vegan fideuá sauce is ready.
- Next, we add the rest of the vegetables to the pan, except the broccoli.
- Cook the vegetablesfor about 5 minutes, stirring occasionally.
- Pour the vegetable brothinto the pan, add the bay leaf, salt and turmeric, stir well and bring the broth to a boil.
- When the broth boils, lower the heat to medium and add the noodles, chickpeas, broccoli and soy meat strips (thawed previously).
- Cook the vegetable fideuá for10 minutes over moderate heat, turn it off, cover the pan with aluminum foil and let it rest for 20 more minutes.
- Sprinkle a pinch of saffron on top and serve the vegetarian fideuáto your liking, with a little aioli or vegan mayonnaise if you like it, or simply with a few drops of lemon juice.
