Vegetarian Couscous Recipe

Couscous or couscous is a perfect ingredient for cooking quick and simple dishes, since it requires very short cooking times. In this recipe I am going to show you how to prepare an easy vegetarian couscous salad or side dish with vegetables, seaweed that gives it a touch of the sea, and nuts (dates and walnuts) that give the dish a crunchy and sweet touch. This vegetable couscous dish can be served both hot and cold, so get to work and cook this typical preparation from Arab countries in this vegan version.

Ingredients to make Vegetarian Couscous:

  1. 1 cup couscous
  2. 1 sheet of nori seaweed
  3. 3 dates
  4. 5 walnuts
  5. ½ red bell pepper
  6. ½ green bell pepper
  7. 1 carrot
  8. 1 stick of celery
  9. 1 tablespoon of oil
  10. 1 pinch of salt
  11. 1 squeeze of lemon juice

How to make Vegetarian Couscous:

  • Heat a frying pan without oil and toast the sheet of nori seaweed. When it changes color and is well toasted, crush it in the blender or break it with your hands into small pieces.
  • Chop the carrot and pepper into small pieces, chop the walnuts, dates and celery. Heat a frying pan with a little oil and sauté the carrot, celery and pepper until the vegetables are soft.
  • Bring 2 cups of water to a boil in a saucepan. Bring the water to a boil, add the couscous, remove the saucepan from the heat and cover it and let it rest for 5 minutes until all the water is absorbed.
  • In a bowl mix the couscous with vegetables and dates, the fried seaweed, the walnuts and the salt.
  • If you prefer to serve the vegetable couscous cold, garnish it with lemon juice and serve it as a couscous salad or a starter dish. You can also sauté it in the pan or microwave it and serve the vegetarian couscous as a side dish to a hot dish.
