Vegetarian Chickpeas Recipe

Ingredients to make Vegetarian Chickpeas:

  • 400 grams Chickpeas (soaked overnight)
  • 2 onions
  • 1 Carrot
  • 1/2 Zucchini
  • 3 Tomatoes
  • 3 Potatoes cut into cubes
  • 1 clove garlic
  • 1 teaspoon paprika
  • 4 sprigs of coriander
  • Salt
  • Pepper

How to make Vegetarian Chickpeas:

  1. List the ingredients.
  2. Cook the chickpeas in plenty of salted water. Keep in mind that the water will reduce a lot later; we will put more or less quantity, if we want more or less broth at the end of cooking.
  3. Cut the carrot, corvette and tomatoes into small cubes. Finely chop the garlic and onions.
  4. Prepare a sauce with the onions, garlic and tomato. Season with salt, pepper and paprika.
  5. When the chickpeas begin to soften, after approximately 20 minutes, add the carrots and zucchini. Cover again and cook for another 10 minutes.
  6. Add the potatoes and the soffit. Mix, cover and cook until the potatoes are tender, but not broken. If you like, add a few sprigs of coriander.
  7. Serve and enjoy hot!
