Vegetarian Aztec Cake Recipe

The Aztec cake is a dish very similar to the typical Italian lasagna, but adapted to Mexican cuisine that has strong roots based on corn.

Ingredients to make Vegetarian Aztec Cake:

  • ½ piece of onion
  • 1 clove garlic
  • 1 tablespoon of wheat flour
  • 1 branch of parsley
  • 1 branch of Coriander
  • 1 pinch of salt
  • 1 pinch of Pepper
  • 1 teaspoon of Oil
  • for the filling
  • 100 grams of Mushrooms
  • 2 pieces of potatoes
  • 2 pieces of Pumpkin
  • 3 pieces of Carrot

How to make Vegetarian Aztec Cake:

  1. Here are the ingredients to use.
  2. Remember that when cooking, it is much better to list and order the ingredients on the work table to facilitate the tasks in each preparation.
  3. We are going to start our vegetarian Aztec cake by chopping and slicing the vegetables.
  4. The filling must include: onion, green Chile, potato, bell pepper, pumpkin, carrot, mushrooms and spinach.
  5. Since we have the vegetables ready, in a pan with previously heated oil, we will add the onion so that it begins to fry.
  6. Followed by the onion, we add the carrotas well and wait a moment for it to soften.
  7. This is the vegetable with which we begin the preparation of our filling, since the carrot takes a while to be ready.
  8. Since the cooking of the carrot is advanced, we add the potatoand wait a little longer, stirring the sauce constantly.
  9. To finish the preparation of the filling for the vegetarian lasagna, we are going to add the pumpkin, the mushrooms, the cooked corn and the bell pepper.
  10. We let everything integrate moving constantly and splash to season. Since it is ready, we reserve a moment.
  11. On the other hand we are going to prepare the tomato saucefor the lasagna. In a saucepan with boiling water we are going to place the red tomatoes, the garlic and the onion.
  12. Since the vegetables are cooked, we add them to the blender together with coriander, parsley and wheat flour. Blend all these ingredientsuntil obtaining a sauce that is as homogeneous as possible.
  13. Now, in another sauce pan, heat a little oil and fry our sauce, seasoning with a little salt and pepper to taste. We wait for it to boil.
  14. Trick:Remember that to level the acidity of the tomato you can add a little sugar.
  15. Now that we have the sauce and filling ready, we begin to assemble the Aztec cake.
  16. To start we add a little spray oil in the baking dish and place the corn tortillas, then we can start adding the filling that we previously prepared on the tortilla.
  17. Since the filing is here, we add a layer of sauce.
  18. On top of the willow we place some spinach leaves.
  19. On the spinach we add a generous amount of grated panel cheese.
