Ingredients to make Vegetarian Amaranth Meatballs:
- 1 cup of Quinoa
- 1 cup of amaranth seeds
- 1 pinch of garlic paste
- 5 grams of fresh parsley
- 1 unit of Eggs
- 1 unit of white onion
- 3 tablespoons of breadcrumbs
- 1 bunch of spinach cooked
- 1 pinch of salt
- 1 pinch of black pepper
How to make Vegetarian Amaranth Meatballs:
- The first step to make the recipe for vegetarian meatballs is to pre-list the ingredients.
- In a deep pot add the quinoa and the amaranth seeds and add 4 cups of water, remember that these foods are cooked in the same way as normal white rice. Cook these foods until soft.
- Take the quinoa and amaranth to a bowl once cooked.
- Add the cooked spinach leaves and the onion in hulls. Blend the base for the amaranth meatballs or process with the help of a blender.
- Add the breadcrumbs, garlic paste, salt and pepper to taste, what this will do is provide a touch of flavor to the vegetarian meatballs. Mix the ingredients very well.
- Add the eggs and continue mixing until all the ingredients are fully integrated.
- Form medium-sized balls as seen in the photograph. The ideal is that we do two types of cooking in this recipe, the first is to fry the meatballs in abundant oil.
- Take a deep pot with enough oil for frying and add each of the vegetarian meatballs to the hot oil. With this cooking method we will obtain crispy and delicious meatballs.
- Remove the meatballs when they are fried to a plate with absorbent paper to remove the excess fat that the preparation contains. Once done, the ideal is to cook if you want these meatballs in a simple Neapolitan or tomato sauce.
- Serve the amaranth meatballs by sprinkling a little parsley on top or, as I mentioned in the previous step, cook in a base Neapolitan sauce. As I focused on cooking and making the meatballs, I presented them this way, they were exquisite! You can accompany them with a vegetarian green salad.
