Vegetable stew recipe with the Thermo mix

Vegetable stew is a typical Spanish dish, which is made especially in winter as it is served very hot and has a high caloric component. Here we explain how to make this recipe with the thermo mix.

Ingredients to make vegetable stew with the Thermo mix:

  • 250 g peeled carrots
  • 250g frozen spinach
  • 50 g of extra virgin olive oil
  • 150g leeks, sliced ​​(white part only)
  • 150 g of potatoes in small pieces
  • 1 garlic clove
  • 2 tablets of chicken broth or salt
  • 800 g of water pepper to taste
  • 2 tablespoons chopped coriander (optional)

How to make vegetable stew with the Thermo mix:

  1. Grate the carrots, leeks and garlic for 10 seconds at speed 5; helping you with the spatula, add the oil and program 5 min, temperature 100º, speed 1 1/2.
  2. Incorporate the potatoes, spinach, the condiments and the water, program 30 min, temperature 100º, speed 1.
  3. When finished, check the amount of liquid and add more water if you wish, correct the seasoning and serve hot with the chopped coriander.
  4. You can add 200g of cooked chickpeas.
