Ingredients to make Vegetable Stew:

  • 2 units of Potato
  • 4 units of Artichoke
  • 8 units of Mushroom
  • 1 unit of Onion
  • 2 units of Carrot
  • 1 unit of green pepper
  • 1 unit of Zucchini
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 dessert spoon of dried oregano
  • 3 tablespoons of olive oil
  • 800 milliliters of Water (3⅓ cups)

How to make Vegetable Stew:

  1. We gather all the ingredients to prepare the vegetable stew.
  2. First, we peel and clean the artichokes as seen in the photo. It is necessary to remove the outer leaves and leave only the heart. To prevent them from oxidizing, you can sprinkle them with a little lemon.
  3. Cut the rest of the vegetables into small squares and season with salt and pepper.
  4. In a pot, fry the onion, pepper and carrot in that order. Let cook for 5 minutes on medium heat.
  5. Then add the artichokes and put a little dried oregano. We cook another couple of minutes.
  6. It is time to add the mushrooms, zucchini and potatoes. We rectify salt if necessary and move everything. We cook for another 5 minutes. After that time, cover with water and let it boil until the potatoes are tender.
