Ingredients to make Vegetable Salad with Mango:

  • 1 can of asparagus tips
  • 50 grams small raisins
  • 2 Tupelo buds
  • 2 mangoes
  • 1 medium carrot
  • 3 puts
  • 1 apple
  • 1 slice of Mental cheese

For the sauce:

  • 1 egg
  • 1 tablespoon of mustard
  • The juice of half a lemon
  • 2dl Of olive oil
  • 1 skimmed yogurt
  • 2 tablespoons tomato concentrate
  • Salt

How to make Mango Vegetable Salad:

Peel, wash and cut the carrots into very fine julienne. Drain the asparagus. Peel the apple, rub it with lemon so that it does not darken, remove the seeds and cut it into small cubes. Wash and julienne the buds. Cut the cheese into squares. Peel and cut the mangoes into small segments, reserve on a plate. Put all the ingredients in a salad bowl and add the raisins. For the sauce: Work the egg in the blender, with the lemon juice, salt, mustard and oil. Add the concentrated tomato and 3 tablespoons of the yogurt; beat a little more until you get a pink, light and smooth sauce. Pour the sauce into the salad bowl and stir. Wash the endives and remove the leaves, cutting the longest ones. Introduce them standing up in the salad (on the edges of the salad bowl). Cover the center with the rose-shaped mango segments.
