Vegetable Salad with Avocado Recipe

To eat healthy and balanced it is necessary to include legumes in our diet. Legumes are a source of carbohydrates, fiber, protein and B vitamins. If you thought that you can only eat legumes in stews or stews… wrong! These foods can be used to make fresh salads, perfect for the warmer months.

Ingredients to make Salad of legumes with avocado:

  • 500 grams of cooked beans
  • 1 tomato
  • 1 piece of green pepper
  • 1 Carrot
  • 1 avocado
  • 1 pinch of fresh oregano
  • 1 can of sweet corn
  • 1 pinch of salt
  • 1 splash of white wine vinegar
  • 1 jet of olive oil

How to make Vegetable Salad with Avocado:

We gather all the ingredients to make the legume salad with avocado. For this salad you can replace the white beans with cooked chickpeas or lentils. First, we peel the carrot, chop it into small squares and place it in a salad bowl. We booked. As you know, carrots are perfect for enhancing your tan thanks to their high beta-carotene content. Next, we add the sweet corn and the tomato cut into small cubes. We move so that all the flavors are mixed. Cut the green pepper into squares and add it to the vegetable salad with avocado.  If you do not want to use green pepper you can substitute it with cucumber or another pepper that you like better.

Peel the avocado, remove the central bone and add it to the salad cut into squares. In the same way, we drain the cooked white beans, wash them and add them to the salad. If you prefer, you can cook the legumes yourself in plenty of boiling water. Dress the legume salad with avocado by adding a little salt, vinegar, a splash of olive oil and chopped fresh oregano. Fresh oregano gives it a very rich flavor, but if you don’t have it you can add fresh basil and dried oregano. This legume salad with avocado is perfect as a main dish since it has all the necessary carbohydrates and a multitude of vitamins.
