Vegetable quiche recipe without cream

We show you a very simple vegetable quiche, with healthy vegetables and without lactose.

To prepare this easy vegetable quiche you only need the oven, eggs and the vegetables you have at home. On this occasion we have used puff pastry because it is what we had on hand, but this recipe is usually made with short crust pastry.

As you know, we think about all kinds of diets, that’s why we have prepared a vegetable quiche without cream for all those who are lactose intolerant or for those who prefer not to include this ingredient.

Ingredients to make vegetable quiche without cream:

  • 1 unit of Onion
  • 1 unit of Eggplant
  • 1 unit of green pepper
  • 2 units of Carrot
  • 1 unit of Zucchini
  • 3 units of Egg
  • 1 unit of puff pastry
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 pinch of ground nutmeg
  • 1 jet of olive oil

How to make vegetable quiche without cream:

We gather all the ingredients to make the vegetable quiche without cream. As we mentioned in the introduction, for this recipe we have used puff pastry that we had at home, but traditionally it is made with short crust pastry. We leave you how to make it in this quiche dough recipe.

Cut the onion and pepper into small pieces, as indicated in the image, and sauté them in the pan for 3 minutes with a little olive oil. Add the peeled carrot and also cut into squares. Let cook for a couple of minutes.

To continue with the filling of this easy vegetable quiche, we add the peeled and diced zucchini. We cook for a couple of minutes. Next, we incorporate the aborigine cut more or less like the zucchini and add a little salt and pepper. Let cook for 5 minutes.

On the other hand, beat the eggs together with a little salt and ground nutmeg. Mix the vegetables with the eggs.

We stretch the puff pastry or short crust pastry, as you like, and fill with the vegetables and the beaten egg. We close the edges of the puff pastry a little, paint the upper parts of the dough with a little beaten egg and put in the oven at 180ºC for 20 minutes.

Once removed from the oven, let the vegetable quiche without cream rest for a few minutes and we can eat it warm or cold. Enjoy your meal!
