Ingredients to make Vegetable Pate:
- 1 unit of Eggplant
- ½ unit of white onion
- 1 clove garlic
- 5 grams of fresh parsley
- ½ teaspoon Cumin
- 1 jet of olive oil
- 1 pinch of salt and pepper
How to make Vegetable Pate:
- Before making the eggplant and onion pate, the first step is to get all the ingredients ready.
- In a refractory add the aubergine cut lengthwise and make some cuts so that it cooks easier. Also add an onion cut in half and season with salt, pepper and olive oil. Bake at 200ºC. For 45 minutes, until golden.
- When the vegetables come out of the oven, wait for them to cool down a bit and add the aubergine pulp, onion, garlic clove, lemon juice and a splash of olive oil to the blender. Process until a homogeneous mixture is obtained.
- To finish this delicious vegan spread, add the parsley, cumin, pepper and salt. Process again for a few minutes.
