Vegetable Paella with Artichokes Recipe

Ingredients to make Vegetable Paella with artichokes:

  1. 4 small glasses of regular or round rice
  2. 10 small glasses of water or vegetable broth (double the rice ones plus 1 or 2)
  3. 2 tablespoons of olive oil
  4. 1 pinch of salt (optional)
  5. 1 medium onion
  6. 1 medium or small zucchini
  7. ½ red pepper or a few strips of roasted red pepper
  8. 1 small green bell pepper
  9. 1 clove garlic
  10. 1 teaspoon sweet paprika
  11. 1 carrot
  12. 100 grams of mushrooms
  13. 4 artichokes
  14. Green or wild asparagus (to taste)
  15. 20 threads of saffron

How to make vegetable paella with artichokes:

  • Wash, peel and chop the vegetables to small size. Peel only the onion, garlic, carrot and artichokes.
  • Tip: You can add other vegetables that you like if you prefer, such as eggplants.
  • Put the paella over medium heat with the oil and when it begins to be hot add the clove of crushed garlic and give it a few turns.
  • Add the vegetables and let them fry over medium heat, stirring from time to time.
  • At the same time, put a saucepan or pot to heat the water or vegetable broth. If you use brick-bought broth for the paella with artichokes, do not add any salt, as it usually has enough, but if you use homemade broth or water, add a pinch of salt to the liquid and at the same time while the vegetables are frying, add another pinch of Salt.
  • When the vegetables are almost done, add the rice and stir a little. Add the paprika and saffron strands and stir well until everything is well integrated.
  • Turn up the heat, add the broth or hot water to the vegetarian paella and leave it over high heat uncovered for 10 or 15 minutes so that it cooks well.
