Vegetable Paella Recipe

Ingredients to make Vegetable Paella:

  • 250 milliliters of olive oil
  • 2 units of ripe tomato
  • 400 grams of Rice
  • 300 grams of Cauliflower

  • 1 unit of Eggplant
  • 1 unit of Pumpkin or Zucchini
  • 1 bunch of spring garlic

  • 2 units of Artichoke
  • 100 grams of tender peeled broad beans
  • 1 clove garlic
  • 1 dessert spoon of sweet paprika
  • 1 pinch of salt
  • Vegetable broth or water
  • 1 pinch of Coloring or Saffron

How to make Vegetable Paella:

  1. Cut the vegetables into pieces of about 4 or 5 cm. Heat the oil in the paella until it begins to boil for the first time.
  2. Add the very finely chopped onion, when it begins to soften, add the rest of the vegetables and over a very low heat for 15 minutes, stirring frequently.
