Vegetable Paella Recipe

The vegetable paella is the perfect option if you are vegan or do not eat meat. Made with a homemade vegetable broth and a mixture of roasted vegetables, this vegan rice dish will surprise you with its intense flavor. Follow the step by step of this recipe and do not be scared by the instructions, you will see that it is much easier to prepare than it seems and you will love the result.

Ingredients to make Vegetable Paella:

  • 500 grams of bomba rice
  • 1½ liters of vegetable broth
  • 1 zucchini unit
  • 1 unit of yellow zucchini
  • 1 unit of Eggplant
  • 2 units of Artichoke
  • 1 unit of green paprika
  • 1 unit of red paprika
  • 5 units of tomato
  • 5 garlic cloves
  • 1 unit of purple onion
  • 100 grams of Peas or Peas
  • 20 grams of Paprika
  • 1 gram of Saffron
  • 1 splash of olive oil
  • 1 pinch of salt and pepper

How to make Vegetable Paella:

  1. Prepare all the ingredients to prepare this delicious vegan paella.
  2. Roast the bell peppers until they are black. Then remove the skin and cut into thin strips. Set aside a piece of red paprika for the tomato puree.
  3. Cut the zucchini and aborigine into half-moons, cover with olive oil and salt. Bake in the oven at 180°C. Until they release their juices, approximately 20 minutes.

  6. In the peeler, sauté the finely chopped garlic and onion for 5 minutes over medium heat.
  7. Add the tomato puree, paprika and saffron. Cook for 5 minutes and season.
  8. Add the vegetable broth and continue cooking until it starts to boil. Then, add the rice and correct the seasoning if necessary with a little more salt.
  9. When the rice is semi-cooked add the zucchini, eggplant and artichokes.
  10. Once the rice is cooked, add the paprika and the peas, previously cooked in water, to decorate the vegetable paella. This vegan dish has a spectacular flavor and does not need any garnish.
