Vegetable Noodle Soup Recipe

Ingredients to make Vegetable Noodle Soup:

  • 200 grams of thin noodles
  • 3 tomatoes (or another type of tomato)
  • 1 piece of onion
  • 1 clove garlic
  • 1 pumpkin
  • 1 potato
  • 1 carrot
  • 1 tablespoon of oil
  • 1 teaspoon chicken (or vegetable) bouillon powder
  • 1½ liters of water
  • 1 pinch of salt to taste

How to make Vegetable Noodle Soup:

  1. To start the recipe for noodle soup with vegetables, blend the tomatoes, onion and garlic clove with half a cup of water for 3 minutes and reserve.
  2. This is a very popular recipe in Mexico, but if you live in another country, you can use another type of tomato that you like.
  3. Trick: cut the tomatoes beforehand to make it easier to blend them.
  4. Peel and chop the pumpkin, carrot and potato into small cubes.
  5.  Cooking the noodles with the vegetables will intensify the flavors, we recommend using raw vegetables so that when they boil they release their flavors, but you can also use frozen or canned vegetables.
  6. You can also substitute these vegetables for others, such as spinach, broccoli or cauliflower, just make sure to cut them into small pieces.
  7. Heat the tablespoon of oil in a pot and fry the noodles until they turn golden brown, moving them constantly to prevent them from burning.
  8. This step is optional, but it will give the noodle soup more flavor and allow the pasta to finish.
  9. Add the carrot and sauté for a few minutes.
  10. Cooking the carrot earlier will give the soup a better flavor and will take less time to cook later.
  11. With the help of a strainer, empty the crushed tomato and let it heat up for 3 minutes.
  12. Add the chicken bouillon powder and salt to taste and let it season for 5 minutes.
  13. Stir constantly to prevent it from sticking to the bottom.
  14. You can also use liquid chicken broth or add chicken meat to the soup, such as breast.
  15. Tip: you can replace the chicken stock cube with a vegetable stock cube or omit it directly.
  16. Add the potato and pumpkin and pour 1 liter and a half of water, mix once more and bring to a boil.
  17. Your noodle soup will be ready when the vegetables are cooked.
  18. Tip: if you haven’t cooked the pasta before, you can add it when the vegetables are almost ready so it doesn’t overcook.
  19. Serve your noodle soup with vegetables with a touch of lemon or fresh cheese.
