Vegetable fajitas with rice recipe

Fajitas are one of the most famous and easiest dishes to prepare in Mexican gastronomy and Tex-Mex cuisine. The filling of the fajitas is traditionally prepared with roast beef and some vegetables, served on a wheat or corn tortilla. However, the filling of these fajitas combines two other popular ingredients of Mexican cuisine: beans and rice, as well as vegetables and avocado sauce that give color and flavor to this dish.

Ingredients to make Vegetable Fajitas with Rice:

  • 4 units of corn or wheat tortillas

For the filling

  • 1 cup of cooked rice (175 grams)
  • 1 cup of cooked black beans
  • ½ head of broccoli
  • 1 Carrot
  • 2 pickles
  • 1 teaspoon pumpkin seeds
  • 1 can of roasted peppers
  • ½ bunch of Cilantro
  • 1 dash Sriracha or other hot sauce

For the guacamole

  • 1 avocado
  • ½ Lemon
  • 2 cloves of garlic
  • ½ pinch of salt
  • ½ bunch of Cilantro

How to make Vegetable Fajitas with Rice:

Separate the broccoli into florets, steam or boil it for 5 minutes to soften it a bit. Separately, to continue with the preparation of the filling for the vegan fajitas, we grate the carrot, cut the roasted peppers into strips and slice the pickles.

We prepare the avocado sauce by grinding all the ingredients in the blender until we obtain a creamy and homogeneous sauce. We reserve it for a moment. In a frying pan or griddle,  heat the tortillas a little. You can buy these tortillas ready-made at any supermarket, or make them yourself following the recipe for corn tortillas.

To assemble the vegetable fajitas, we spread each tortilla with the guacamole. Then, we fill them by placing several tablespoons of beans, several tablespoons of cooked rice and vegetables on top (broccoli, peppers, carrots and pickles) in the center.

We fold the edges of the tortillas towards the center and fix them with toothpicks. We serve the vegetable and rice fajitas with pumpkin seeds, chopped fresh cilantro and a splash of sriracha or another hot sauce on top. And ready! Now we can enjoy this typical Mexican food without any meat.
