Vegetable escalivada recipe

Escalivada or vegetable escalivada is a traditional dish from areas near the Mediterranean, such as Catalonia, Valencia and Murcia. It is prepared with oven-roasted vegetables and, although the vegetables used may vary depending on the area in which it is prepared, aubergines, onions and red peppers can never be left out.

Ingredients to make Escalivada of vegetables:

  • 3 red bell peppers
  • 3 eggplants
  • 3 onions
  • 1 splash of olive oil
  • 1 pinch of salt

How to make Vegetable Escalivada:

Preheat the oven to 180ºC with heat up and down. If you have a fan, you can put it on to speed up the grilling of the vegetables.

Wash and dry the red peppers and aubergines well. Cut the aubergines in two and put them on a baking tray together with the peppers. Peel the onion, remove the thicker layers and transfer them to the tray as well. Spray the vegetables with a splash of oil and place them in the oven. Bake vegetables for 40-50 minutes or until golden brown. For them to be rich inside, the outside must be toasted.

When they are ready, turn them off and leave them in the oven for a while. You can also take them out and cover them with a kitchen towel to make it easier to remove the skin later. Remove the vegetables and clean them, remove the skin from the peppers and seeds, remove the meat from the aubergines and remove the outer layer of the onion. Cut the pepper into strips and put them in a bowl, do the same with the eggplant meat and onions. Sprinkle with a dash of olive oil and a little salt. It serves.
