Vegetable Dumplings Recipe

Ingredients to make Vegetable Dumplings:

  • 1 package of dumpling wafers
  • 1 zucchini
  • 1 leek
  • 1 small or medium onion
  • 1 piece of green pepper
  • 1 piece of red pepper
  • 100 grams of fried tomato
  • 1 egg (optional)
  • 1 pinch of oregano
  • 1 pinch of salt
  • 1 splash of olive oil
  • 1 pinch of pepper

How to make Vegetable Dumplings:

Start by preparing the vegetables. Peel and cut the zucchini into small squares, wash the leek, remove the greenest part and cut it into pieces. Peel and cut the onion as well. Cut the pepper into small pieces. Put a large frying pan with a good splash of oil, add the leek and onion, leave a few minutes for them to soften a bit and add the courgette and the pieces of pepper. Add a little salt and let everything cook until it is very poached. When the vegetables are almost poached, add the fried tomato, the pepper and the oregano (optional). Mix everything and let it cook for a few minutes so that all the flavors mix well.

Close the easy vegetable dumplings and seal them well, you can use a fork to seal the edges. Put the dumplings on a baking tray. Beat the egg and brush them with it using a kitchen brush. Turn on the oven to 180 ºC with heat up and down, put the tray in the center of the oven. Cook until golden brown, about 30 minutes.

Trick: If you prefer, you can also make these fried vegetable dumplings. Just heat the oil and fry them until golden brown.

Once they are golden, take them out and let them cool down a bit. Put the vegetable dumplings in a bowl and serve. Enjoy!
