Ingredients to make Vegetable Broth:
- 700 ml chicken broth
- 50 g red paprika
- 50g red onion
- 50g carrot
- 50 g string beans
- 1 clove garlic
- 20g coriander
- 1 unit of lemon
- olive oil
- Salt
- Pepper
How to make Vegetable Broth:
- List all the ingredients.
- In a pot with oil add the paprika and carrot cut into small cubes, with salt and pepper cook for 5 minutes.
- Add the onion and beans, cook for 5 more minutes.
- Add the chicken broth, the macerated clove of garlic, the coriander sprigs and a few drops of lemon juice, bring to a boil and rectify the flavor with salt.
- Cook for 30 minutes over low heat, remove the coriander branches.
- Serve and sprinkle a little finely chopped coriander, if desired you can strain.
