Vegetable Broth Recipe

Ingredients to make Vegetable Broth:

  1. 100 grams of leek onion
  2. 60 grams of Celery
  3. 1 unit of bell pepper or red paprika
  4. 100 grams of white onion
  5. 1 unit of Carrot
  6. 5 grams of Parsley
  7. 2 bay leaves
  8. 1 pinch of thyme
  9. 2 cloves of garlic cloves
  10. 1 pinch of salt
  11. 1 pinch of black pepper
  12. 1 glass of white wine

How to make Vegetable Broth:

  • The first step to make our basic broth recipe is to pre-list the ingredients.
  • Bring a pot to medium heat and, once the bottom of the pot is hot, add the white onion, celery and carrot, all chopped. These ingredients are added first so that they can be fried, since they are the ones that contain the hardest. Sauté our vegetables for a few minutes.
  • Add the whole garlic cloves, a little salt and pepper to taste. Sauté for a few more minutes.
  • Add the red pepper or paprika and the leek onion; Let sauté for a few more minutes and pour the white wine to deglaze, ideally all the alcohol in the wine evaporates.
  • Once the alcohol in the wine evaporates, cover our vegetable broth with enough water, add the bay leaves, thyme and fresh parsley. Let the broth cook for 30 to 45 minutes over low heat and remove from the heat.
  • Once you turn off the heat, liquefy the broth by passing the vegetables through a sieve, what we are going to use is the broth or the liquid that remains from our recipe. Serve the vegetable broth hot, this is ideal for vegetarians or vegans, they can also be used as a base for any sauce, soup or cream that is made.
