Traditionally fajitas are filled with beans or meat, but this filling is very different. We are going to use ingredients from oriental cuisine: tofu, hummus, soy sauce and vegetables such as cabbage, zucchini and bean sprouts. Ingredients to make Vegetable and Tofu Fajitas:
- 4 wheat tortillas
- 1 zucchini
- ¼ white cabbage
- 1 handful of bean sprouts
- 200 grams of tofu
- 1 splash of soy sauce
- 1 teaspoon garlic powder
- ½ cup of hummus
- 1 pinch of black pepper
- ½ teaspoon of salt
- 1 teaspoon of sesame seeds
- 1 tablespoon of oil
How to make Vegetable and Tofu Fajitas:
To start preparing the vegan fajitas, you must leave the vegetables ready. To do this, cut the zucchini or courgette into thin slices, the julienne cabbage and the tofu into 8 equal rectangles. Heat a greased skillet or griddle and cook the seasoned tofu rectangles over and over.
Prepare the hummus by mashing half a cup of chickpeas, two cloves of garlic, a splash of oil and lemon juice, a teaspoon of cumin and salt, a pinch of pepper and two tablespoons of tahini (optional) or use the hummus prepared from any commercial brand to make vegetable and tofu fajitas.
Heat a pan with oil and fry the cabbage and zucchini until they start to soften. Add the bean sprouts, a good splash of soy sauce, garlic powder, sesame seeds, salt and pepper, stir and sauté two more minutes to soften the bean sprouts. To form the vegetable and tofu fajitas, generously spread each tortilla with hummus and place two rectangles of tofu in the center.
Place several tablespoons of filling in the center, close the tortillas by lifting the edges and bringing them towards the center and mark each fajita on the grill to fix the tortilla.
