  • 1 red pepper
  • 1 green pepper
  • ½ onion
  • 3 garlic cloves
  • 100 milliliters of fried tomato
  • 1 egg
  • 1 splash of extra virgin olive oil
  • 1 pinch of salt

How to make Vegetable and Cheese Puff Pastry:

The first thing we are going to do to make this vegetable and blue cheese puff pastry is, in a large pan, add a splash of EVOO and add the sliced ​​garlic. When they start to sizzle, add the peppers and onion cut into mirepoix and begin to fry it. When the onion begins to become transparent, add the laminated mushrooms and stir for about 10 more minutes so that they release a little water. Season lightly and add the fried tomato. We move everything a couple of minutes and reserve. That the vegetables are not too poached, since they will finish cooking when we put the vegetable puff pastry in the oven.

Now we are going to prepare the portions of puff pastry with blue cheese, nuts and vegetables. With the help of a knife, cut portions of the puff pastry sheet of about 8×12 centimeters and then make a mark about one centimeter from the edge, as shown in the photo. And with a fork we prick the inside so that it rises less than the edge. We finish painting with the beaten egg, the same edge. Now we place the amount that we think is convenient of the vegetable ratatouille that we had reserved inside the puff pastry, respecting the edges. Place a few portions of blue cheese on each puff pastry and top with half a walnut.

Preheat the oven to 200 degrees and cook the puff pastry stuffed with vegetables in the oven for about 15 minutes. If possible, serve the freshly made vegetable and cheese puff pastries. If this is not possible, at the time of serving, about 15-20 seconds of microwave at maximum power will suffice.
