Vegetable and cheese croquettes recipe

Ingredients to make Vegetable and Cheese Croquettes:

  • 3 cups of milk (720 milliliters)
  • 3 tablespoons of flour
  • 150 grams of onion
  • 150 grams of Chayote blanched
  • 150 grams of blanched broccoli
  • 150 grams of Carrot
  • 150 grams of Zucchini
  • 2 cloves of garlic
  • 100 grams of cheese

Breaded

  • 200 grams of flour
  • 400 grams of ground bread
  • 1 pinch of Nutmeg
  • 1 pinch of salt and pepper
  • Vegetable oil
  • 6 units of Egg

How to make Vegetable and Cheese Croquettes:

To start preparing these homemade croquettes, the first step is to finely chop the onion  and garlic cloves. Use ingredients low in sugar and salt. It also chops the rest of the vegetables. The peeled carrot, the previously blanched broccoli and chayote, the clean and unpeeled zucchini in small cubes.

Tip: To blanch broccoli and chayote, simply submerge them for 3 to 5 minutes in boiling salted water

Sauté the onion and garlic in a pan with hot oil. Add the rest of the vegetables, season and cook everything together for about 5 minutes. Add the flour and mix well until it is evenly distributed throughout the pan. Slowly pour in the warm milk, whisking constantly. Season with salt and pepper and work the dough over low heat for 15 minutes. The secret of croquettes is to work the dough calmly and gently.

Grate the cheese on top, mix well and transfer the dough to a large, previously greased bowl. Let it cool down and come to room temperature. When the dough for the croquettes for diabetics has cooled, cut pieces and make the typical shape of the croquettes. Then pass them through flour, egg and ground bread.

Pass the croquettes through the egg and ground bread again. Repeat this process until you finish with all the croquettes.

Refrigerate the vegetable croquettes for twenty minutes. Once this time has elapsed, fry them in hot oil until lightly golden. Drain excess oil with absorbent paper.  Serve the vegetable and cheese croquettes at Christmas dinner and enjoy with the family.
