Vegetable and Apple Empanada Recipe

This easy apple pie dish with a vegetable filling that I share is a simple and quick recipe for homemade empanadillas that does not require prior preparation of the dough, since we are going to replace the dough with wheat tortillas, therefore, you will have your vegetable and apple empanada ready in 15 minutes. It is a perfect recipe for a rich and vegetable breakfast or for a snack.

In addition, you can always change the ingredients described below for those that you prefer and thus fill your salty apple pie with the foods that you like the most.

Ingredients to make Vegetable and Apple Empanada:

  • 2 wheat tortillas
  • 1 apple
  • ½ Eggplant
  • ½ red bell pepper
  • 4 mushrooms
  • 1 tablespoon of chickpea hummus
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 teaspoon of oil

How to make Apple and Vegetable Empanada:

To prepare the filling for the vegetable and apple pie, peel the fruits and cut them together with the vegetables into medium dice. Heat a frying pan with a splash of oil and sauté the vegetables with a little salt and a pinch of pepper until soft. Spread each wheat tortilla  with chickpea hummus or another sauce or dip that you like. Fold the tortilla in half, marking the fold line, and spoon several tablespoons of the filling into one half. Fold the tortilla covering the filling and seal the edges well by pressing them hard with a fork. In the same hot skillet, cook the salted apple empanadas until they brown a little and serve them for breakfast or snack.
